Bacon Broccoli Salad with Chia seeds and Cranberries

Ingredients:

Salad Mixture:

4 broccoli crowns, finely chopped (7-8 cups)

½ cup bacon bits, crisp-cooked

½ cup sliced almonds

½ cup red/white onion, diced

2 tablespoons chia seeds

1 cup dried cranberries or raisins


1 cup mayonnaise

¼ cup apple cider vinegar or white wine vinegar

¼ cup granulated sugar

Salt and pepper to taste


Cook bacon bits in a small skillet over medium-high heat until crispy, set aside.


Blanch the chopped broccoli in salted water for around 30 seconds, then rinse it with cold water, drain and pat dry or use a salad spinner.


In a large salad bowl, add in your finely chopped broccoli, ½ cup of bacon bits, ½ cup of onion, 2 tablespoons of chia seeds, and 1 cup of dried cranberries.


In a small bowl, whisk 1 cup of mayonnaise, ¼ cup of apple cider vinegar, and ¼ cup of sugar until smooth. Pour over salad mixture and toss to mix well.


Season the salad with salt and pepper to taste. Cover and chill in the fridge until ready to serve (at least one hour).
